Today’s post may be all over the place. It’s ok. Just bear with me and try to follow along.

 

I had my first interview since moving to Virginia yesterday. I am probably a little too excited about it. I have learned long ago I really shouldn’t get my hopes up about these things.

Job Interview

I should hear sometime mid-next week. Keep your fingers crossed for me because we REALLY need this. The job isn’t my ideal job but it gets me into the field I want to be in. I am more than willing to work my way up, so a foot in the door is a great start!

That was a great start to the morning. Instead of getting up super early and having to shower before heading to my interview I opted to push my run back. I only had a little over 5 miles on the agenda for the day.

5 Miles

Pushing my run back also meant I would be running on the treadmill. It was 97 degrees and almost 80% humidity when I got home. No thank you! There are some days I will brave it, today was not one of those days.

I ended up doing 5.5 miles finishing it off with 6 strides. Overall a good run. I did some lower body and ab strength training before calling it a day.

 

Fast forward to dinner. I was trying not to open a new packet of chicken since we are leaving tomorrow, and all I had was some frozen shrimp and a few bags of frozen vegetables.  Sounds like a stir fry kind of night!

Stir Fry

It’s always a little tricky cooking the day before a vacation. I try to use up everything we have so we don’t have to waste anything.

Dinner

The stir fry wasn’t fancy just shrimp, green beans, and broccoli. I stir fried it in soy sauce, olive oil and some red pepper flakes. Wes threw in some cayenne pepper before I finished hoping to add some spice. I served it over brown rice.

The verdict? It was OK. It was good but it was really missing some flavor. Next time I am going to try to thicken the sauce up a bit.

Sweet Hot Mustard

We ended up adding some of this Hickory Farms Sweet Hot Mustard we bought at the store a few weeks ago. It definitely added a little something extra to the meal.

Even in the 97 degree heat, there is nothing better than a nice dinner out on the back porch.

 

I have a workout this morning and then we are getting on the road to head down to the beach. Hopefully Arthur will stay away and won’t bring too much rain.
